This week in Montreal I was able to try out a really nice restaurant called Toqué. It was such a nice experience! It has been a while since I’ve been to a restaurant that really cares deeply about every single item in a place. I don’t often eat at super fancy restaurants so it's nice to see how they treat their ingredients like art. I felt compelled to write about the restaurant not because I thought it was the best thing I’ve ever tasted but because they use everything of each ingredient and source locally. It’s something that I want to do with my cooking because I want to support local farmers. It’s starting to make me feel a little guilty when I shop at Whole Foods and Costco. Once things settle in at school I want to think about taking Saturday morning to visit a farmers market to get my produce for a week. It might inspire me to cook differently week to week.
