log 46: simplicity

There was very little in terms of cooking during my final week in Hawaii. I’m so grateful that I’m able to spontaneously book a flight and show up on my parent's doorstep. I’m even more grateful that I’m able to spend precious time cooking for them. But all good things must come to an end. After a solid two weeks of decompressing a hectic work schedule, I’m ready to get back on the grind. My goal was to finish my algorithm so that when I get back to San Diego I can begin on the other parts of my app that depend on the data from the algorithm. My dad once told me, “As a CEO you are never just on vacation or just working, it’s always a mixture of both.” This trip I definitely felt that. I wasn’t stressed about work because I was able to get a little bit done every day and in the end, I reached my goal. Now looking forward, I have about two weeks until I take my CSCS test. I’ve been studying for it every day but I still have a lot more to do. 

Earlier this week my family and I ate at a sushi restaurant where I discovered a new liqueur I enjoy. It’s called “Hakutake Umepon”. It is a derivative of Japanese Rice shochu, Ume (Plum), and Dekopon ( a type of mandarin orange). This inspired a simple Japanese date night meal for anyone looking to cook for someone!

Cold Niku Udon


Ingredients

  • Thinly sliced beef

  • Udon

  • 1TB Mirin, 2TB Sake, 3TB Shoyu, ½C Dashi, 2TB Sugar

  • Green Onion

  • Tsuyu

  • Daikon

  • La-Yu

Method

  1. Chop the green onion, grate the daikon and squeeze out the water. 

  2. Bring the mirin, sake, shoyu, dashi, and sugar to a simmer in a pot and add the beef.

  3. Boil the udon noodles. When the udon is done, rinse under cold water to stop the cooking process.

  4. In a bowl, add the udon and tsuyu. Tsuyu is quite salty, so only add enough for your taste. You can always dilute it with some cold water. 

  5. Place the beef on top then add the garnishes. Drizzle on some la-yu for a small kick of spice.

  6. Enjoy! Such a quick and easy meal.

Calpis and Umepon Cocktail


Ingredients

  • 2:1 Calpis to Umepon (1:1 if you’re feeling good)

  • Extras: Lemon, honey

Umepon is already sweet so it can be enjoyed by itself! I like adding the Calpis for a nice nostalgic taste.
