log 56: Kaarage

It’s been a while since I posted a recipe because I have been so busy working on my app. This week I was able to do a little bit of testing in my kitchen where I attempted to infuse ghee with lemongrass, garlic, and Thai chili. The goal was to make a karaage-like chicken dish with a hint of other Asian flavors. I marinated the Karaage in

I beat up some lemongrass, cut some chili, and smashed some garlic for the ghee. I let the aromatics simmer slowly in the cold ghee until they turned golden brown. After that, I fried the chicken bits until they turned deep brown and crispy. What I liked about this dish was it tasted good. That’s pretty much it. It had good texture and flavor. I couldn’t tell if the aromatics changed the flavor of the dish so I’ll have to try again. Perhaps a longer simmer to release more essence. I did find out that ghee is a perfect medium for frying however, I’ll definitely be using that again.
