Although I only lived in Thailand for two years, I can barely remember any of it. I miss the food, especially street food. There is nothing more comforting and exciting than the aromas of night markets serving incredible food. Absolutely packed with flavor and extremely cheap, something you don’t get in the West. In honor of Thai Food, I’m working on a cold noodle dish that has everything that I miss. The spicy, the sweet, the umami, and the tangy. It is definitely a work in progress, but it’s kind of like the first draft.
Thai Glass Noodle Dish
Ingredients:
Lime
Sugar
Dried Chilli
Fish Sauce
Shallot, Garlic
Soy Sauce
Vermicelli
Tomato
Cilantro
Pork
Thai Basil
Mint
Shrimp, Pork, Beef
The idea for the sauce is to have balance while also delivering a ton of flavor. Lime for acidity and to break through the Oil. Sugar for the Chilli, Fish sauce and Soy Sauce for umami. The protein can be whatever you want! All of them go very well with this easy dish.
