After two months of studying French Cuisine in Paris, I have finally completed my course. The Basic Cusine Course at Le Cordon Bleu was both expected and unexpected. Initially, I thought I was taking a course that was separate from the students who wanted to become chefs. I thought it was a course for adults who just love cooking. However, the course turned out to be the first of three courses needed to obtain a diploma from the prestigious school. It was more intense than I thought, but I welcomed it. I only wish that I was able to learn more about how ingredients should be cooked and paired. The program was very “monkey see, monkey do.” My biggest takeaway from the course is my organization and technique skills. I feel like I can time when to cook and plate dishes much better. On top of that, my knife truly feels like an extension of my arm. I have never felt so confident with a tool before. Now that culinary school is done and my physical therapy school applications are in, I can finally focus on the next part of building my app. I’m going to spend the next month back in Asia where I probably won't get anything done in terms of coding. I decided that the next best thing I could do was continue writing my documentation. After I return to the US I’ll focus on learning React-Native, re-write my entire app, then continue development. There’s a lot of work to do. 2024 will be my hardest working year yet.
